Zabaione (Italian dessert made with egg yolks and wine)

  • 4 yolks of ecological or free-range eggs
  • 50g of sugar
  • 125ml of sweet marsala wine
  • 1.Whisk eggs with sugar until you get cream. Whisking constantly, slowly pour the wine.
  • 2.Put the bowl into a pot with hot water, be careful so that the yolks don’t curdle because of the heat.
  • 3.Pour the thick cream to cups, serve with sponge fingers or seasonal fruits.
